East African Plantain Soup/Supa ya Ndizi

Ingredients :

·         2 or 3 green plantains, peeled

·         6 c. canned chicken broth*

·         salt and pepper to taste

How To Make :

·         Slice the peeled plantains and place in a blender or food processor.

·         Add 1 c. chicken broth and blend until smooth. Pour the mixture into a Dutch oven.

·         Add the remaining 5 c. of broth.

·         Stir to combine. Cover and cook over medium heat for 45 minutes, stirring occasionally.

·         Add salt and pepper to taste.

      Preparation time: 1 hour Serves 4 to 6
