Fortune Cookies

Ingredients :

·         1 c. margarine, softened

·         1/2 c. sugar 1 egg

·         2.5 tsp. vanilla extract

·         3.25 c. flour

·         1/2 tsp. baking powder

How To Make :

·         Combine margarine, sugar, egg, and vanilla.

·         Mix until smooth. Add flour and baking powder.

·         Stir everything together to form a ball of dough.

·         Lightly flour a wooden board or flat surface. With a rolling pin, roll half of dough very thin.

·         Use a circle-shaped cookie cutter or the top of a large glass (about 2.5 inches wide) to cut out circles in dough. (Cut dough into other shapes, if wish)

·          you Put a fortune in each circle, off to one side. Fold the circle in half and then in half again. Pinch edges to seal.

·          Preheat the oven to 425Reroll leftover scraps of dough and make cookies from them. Then roll and make cookies from other half of dough

·          Bake cookies for about 10 minutes or until they are lightly browned. Serve when cool.

      Preparation time: 30 to 45 minutes Baking time: 10 minutes  makes 25 cookies

Almond Fruit Float

Ingredients :

·         1 envelope unflavored gelatin

·         1 c. water

·         1/2 c. sugar

·         1/2 c. milk

·         1 tbsp. almond extract

·         1 13-oz. can fruit with syrup, or 1–2 c. fresh fruit, cut into pieces

How To Make :

·         In a saucepan, dissolve gelatin in water.

·         Place over high heat and bring to a boil. Then reduce heat to low.

·         Add sugar and stir until thoroughly dissolved. Stir in milk and almond extract.

·         Mix well. Pour into a deep, square pan and allow to cool to room temperature.

·         Then put in refrigerator to chill. When cool, cut into cubes and serve topped with fruit and syrup.

      ·    If there is not enough syrup with the fruit, make a syrup by mixing 1 c. of water with 3 tbsp. sugar and ¼ tsp. almond extract and heating until sugar dissolves.

Cooling time: 45 to 60 minutes Serves 6

Bean Sprouts with Scallions

Ingredients :

·         2 tbsp. vegetable oil

·         1 lb. fresh bean sprouts, or 1 16-oz. can bean sprouts, drained*

·         1 tsp. salt

·         4 chopped scallions

How To Make :

·         Heat oil in a skillet or wok.

·         Add bean sprouts. Stir-fry for 2 minutes.

·         Add salt. Stir in scallions and cook for 2 more minutes.

       Preparation time: 5 minutes Cooking time: 5 to 10 minutes Serves 4
