Dessert Crepe Batter

Ingredients :

·         4 eggs

·         1 c. all-purpose flour

·         2 tbsp. sugar

·         1 c. milk

·         1/4 c. water

·         1 tbsp. melted butter

How To Make :

·         Beat eggs in a bowl.

·         Add a little bit of the flour and sugar. Use an electric mixer or whisk to combine. Then add a little bit of the milk and water. Mix. Repeat until all of the flour, sugar, milk, and water are added. Then beat with a whisk or electric mixer until smooth.

·         Beat in melted butter.

·         Chill batter at least 1 hour.

·         Cook in a crepe pan as described in the recipe for basic crepe batter at this site

Preparation time: 1 hour 15 minutes Makes 20 to 25 crepes

Glazed Carrots/Carottes Vichy

Ingredients :

·         1 lb. carrots, peeled and thinly sliced

·         1/4 c. water dash of salt

·         3 tbsp. butter or margarine

·         1 tsp of sugar

How To Make :

·         Place all ingredients in a medium-sized saucepan, stir, and cover tightly.

·         Cook over low heat for about 10 minutes or until carrots are tender and glazed (covered evenly with the thick liquid), and most of the remaining liquid has cooked away.

·         Stir to coat with remaining liquid and serve.

 

Preparation time: 20 minutes Serves 4

Peas French Style/Petits Pois à la Française

Ingredients :

·         2 lb. fresh peas or 1 10-oz. package frozen tiny green peas

·         1 tsp. sugar

·         1/2 tsp. salt

·         dash of pepper

·         2 tbsp. minced fresh parsley

·         1.5 c. finely shredded lettuce

·         1/4c. butter or margarine

·         1 tbsp. water
